you'll arrive before the kitchen comes alive. stock from the day before, mise for the day ahead — produce broken down, proteins portioned, sauces started. the work is tactile and repetitive in the best sense: a rhythm that makes service possible. mornings here are unhurried until they're not.

what we’re looking for

someone who finds the prep list satisfying rather than tedious. knife comfort matters; speed is secondary to precision and consistency. you don't need a fine-dining CV — you need the habit of leaving things better than you found them. pride in the fundamentals is the whole thing.
